Happy National Pancake Day!

I thought National Pancake Day was in February or March right before Lent, but several websites stated that September 26th is National Pancake Day.  I’m fine with that.  We can have two National Pancake Days!

I couldn’t find any information as to why September 26th was chosen and tons for the one before Lent.  I’m going to make a leap and say that someone wanted a day that wouldn’t change since Lent changes every year.  Either way, I’m having pancakes this morning!  How about you?
