I can get behind this holiday! Worried about the sugar and/or calories? Try using skim milk and sugar-free chocolate or no sugar added cocoa and some splenda. Add some of your daily fruit to make it even healthier. Bananas and strawberries go great with chocolate milk!

Today is also National Corned Beef Hash Day. No idea why.
Corned beef is one of my favorite things. I might have to throw some corned beef in the crockpot and use some of it to make hash. It’s a “leftovers” recipe so I don’t know exact ingredients. I’ll see if I can figure out exact amounts and post a recipe sometime, but here’s how I make corned beef hash.
- About 1 pound leftover corned beef from the crockpot, cubed or canned corned beef
- 5 large potatoes, cubed or frozen hashbrown potatoes
- 1 onion, medium, chopped
- About 1 cup broth from crockpot
Combine all ingredients in skillet and cook over medium heat until potatoes are soft.
I don’t know if it’s considered hash or not, but I’ve also used leftover mashed potatoes. Fry onion in about 2 tablespoons of butter until tender and add corned beef and potatoes. Cook until potatoes begin to brown. No broth used in this version.
