Tortellini and Ham

Ingredients
  1. 1 package (12 ounces) Barilla Three Cheese Tortellini
  2. 1 cup frozen pepper strips, thawed
  3. 3 tablespoons butter
  4. 1-1/4 cups cubed fully cooked ham
  5. 1 teaspoon minced garlic
  6. 1-1/2 teaspoons ClearJel (cornstarch)
  7. 1/2 cup homemade chicken broth
  8. 1 teaspoon dried basil
  9. 1/2 teaspoon dried parsley flakes
  10. 1/4 teaspoon pepper
  11. 4 tablespoons grated Romano cheese, divided
Instructions
  1. Cook tortellini according to package directions. Meanwhile, in a large skillet, saute pepper strips in butter until crisp-tender. Add ham and garlic; saute 1 minute longer.
  2. Combine the clearjel, broth, basil, parsley and pepper; stir into pepper mixture. Bring to a boil; cook and stir for 2 minutes or until thickened.
  3. Add 2 tablespoons cheese. Drain tortellini; toss with ham mixture. Sprinkle with remaining cheese.
Notes
  1. You could use frozen cheese tortellini.
  2. I clean and freeze peppers at the end of the summer for use all winter.
  3. I also use fresh peppers when in season.
  4. You could use canned chicken broth if you want.
  5. Parmesan cheese could also be used instead of Romano.
  6. Wonderful recipe for using up that leftover ham after a holiday.

Note from Christy: The pictures have broccoli instead of peppers. I used a 12oz bag of frozen broccoli cuts for the picky people. I thought it was great with the broccoli, but I’m anxious to try it with peppers, too.

My mom has the neatest ideas. I just love these denim placemats! The pockets for the silverware… genius! They’re all different but still in sets which makes them that much more interesting.

And I thought her denim storage boxes were amazing!

Another fantastic and creative way to put old jeans to use. I can’t wait to see what she does next! Actually, still have several of Mom’s projects to post. It has been difficult to space them out instead of posting them all at once.

I’ve tried several banana bread recipes in the bread machine, but this is the first one that cooked all the way through while still having enough banana taste to call it banana bread. My hubby loves bananas, so I was excited when I finally found a recipe that worked for me. However, he’s not fond of nuts so the picture is the just banana version of the recipe. I’ve never tried it with nuts.

Now I’m looking for a pumpkin bread recipe that cooks through. The last one I tried was a disaster. Ugh!

Ingredients
  1. 1/2 cup margarine, softened
  2. 2/3 cup milk
  3. 2 eggs
  4. 2 1/2 cups flour
  5. 1 cup sugar
  6. 2 1/2 teaspoons baking powder
  7. 1/2 teaspoon baking soda
  8. 1 teaspoon salt
  9. 3/4 cup mashed bananas
  10. 1/2 cup chopped walnuts (optional)
Instructions
  1. Butter or spray bread machine pan with Pam. I prefer butter, but Pam works better on older pans.
  2. Premix all ingredients in order and pour into bread pan. Some bread machines mix everything fine and some do not. I try to play it safe and premix.
  3. Set bread machine to quick bread or cake setting. If your bread machine doesn’t have either setting, use the bake setting and set timer for and hour and 30 minutes. Make sure to premix everything well if using the bake setting.
  4. Bake and enjoy!
Notes
  1. When banana bread is done baking, remove the pan from the machine and let cool. I don’t let it cool completely myself, I’m too excited to eat some, but let it cool considerably before removing from the pan. It tends to hold up better.

I don’t care for chewy pralines and these turned out perfect. Now I just need to find a recipe for divinity that isn’t chewy. If anyone has one, please please please send it my way. I remember loving divinity as a kid, but it wasn’t chewy. The chewy divinity just isn’t the same.

My mother’s recipe calls for half and half instead of milk. Sounds even creamier so I’m planning on trying it with half and half next time.

I can’t wait to make these again!

  1. 2 cups packed brown sugar
  2. 1 cup sugar
  3. 1 1/4 cups milk
  4. 1/4 cup light corn syrup
  5. 1/8 teaspoon salt
  6. 1 teaspoon vanilla
  7. 2 cups pecan halves
Instructions
  1. Heat brown sugar, sugar, milk, corn syrup and salt to boiling, stirring constantly.
  2. Reduce heat to medium and cook, without stirring, to 236 degrees. Test with candy thermometer. Should form soft ball when dropped into very cold water that flattens when removed from the water.
  3. Cool without stirring about 1 hour or until pan is cool to the touch.
  4. Add vanilla and pecans. Beat until mixture is slightly thickened, about 1 minute.
  5. Drop mixture by spoonfuls onto waxed or parchment paper. Try to divide pecans equally.
  6. Let stand uncovered 12 to 18 hours or until pralines are firm.

We love alfredo, so I was super excited when I ran across this recipe. So much easier and faster! I love not having to boil the pasta separate and heat up the house even more during the summer months.

This recipe isn’t quite as rich as the old way I used to make alfredo, but it’s rich enough. I don’t think I’ll ever go back to the old way. I’m excited to try it with crab and see how it turns out.

One Pan Chicken Broccoli Alfredo

Ingredients
  1. 3 Tablespoons Olive Oil
  2. 2 pounds boneless, skinless chicken breasts
  3. pepper to taste
  4. 12 oz bag frozen broccoli
  5. 3 cloves garlic, minced
  6. 2 cups chicken broth (I make mine with Better Than Bouillon if I don’t have some premade)
  7. 1 1/2 cups heavy cream
  8. 8 oz penne or other small pasta
  9. 2 Tablespoons Italian seasoning
  10. 2 cups fresh shredded real parmesan cheese or 1 cup pre-grated parmesan cheese
Instructions
  1. Cut chicken into bite size pieces and season with pepper.
  2. Lightly brown chicken in olive oil over medium heat. Don’t cook through. The chicken will continue to cook while it simmers.
  3. Add broccoli and garlic. Cook for about a minute. Don’t worry about the broccoli still being frozen. It will cook while it simmers.
  4. Add chicken broth, heavy cream and uncooked pasta.
  5. Bring to a boil. Cover and simmer for 25 minutes or until pasta is tender.
  6. Remove from heat. Add parmesan cheese and Italian seasoning.
  7. Enjoy!
Notes
  1. Don’t like broccoli? Try a different vegetable or omit completely.

I have always made homemade sloppy joes. But, my hubby made some smoked hamburger. I then needed to use it to make something. I chose my old standby sloppy joes and then made some homemade buns. Yummy!

  1. 1 Lb. Smoked Ground Beef (click here for recipe)
  2. KC Masterpiece BBQ Sauce (or your favorite)
  3. 1/2 C. Sweet Pickle Relish
  4. Homemade Hamburger Buns
Instructions
  1. Cook smoked ground beef till done.
  2. Stir in enough BBQ sauce for the consistency you like and pickle relish.
  3. When heated through spoon on hamburger buns and enjoy!
Notes
  1. You can substitute cooked hamburger for smoked hamburger. You can substitute store bought buns for homemade. Use your favorite BBQ sauce.

  1. Ground Beef
Instructions
  1. Preheat smoker to approximately 95-100ºC (200-220ºF)
  2. Crumble meat and spread over a ceramic baking sheet with sides
  3. Place on a rack in the lower half of the smoker.
  4. Smoke cooks for 1 hour or until full of flavor but not fully cooked.
  5. Cooking time will vary depending on weather and wind conditions.
  6. Remove meat with slotted spoon to large skillet, bowl or sauce pan.
  7. Discard fat.
  8. Continue as outlined in your specific recipe.

Creamy Broccoli Coleslaw

  1. 1 Bag of Broccoli Slaw
  2. Coleslaw Dressing

  3. Coleslaw Dressing:
  4. 3/4 C Mayonnaise
  5. 1/3 C Sour Cream
  6. 1/4 C Sugar
  7. 3/4 Tsp. Seasonall Salt
  8. 1/2 Tsp. Ground Mustard
  9. 1/4 Tsp. Celery Salt
Instructions
  1. Mix Broccoli Slaw with enough coleslaw dressing to coat.
  2. Put in refrigerator for four hours or overnight.
  3. Stir before serving.

Who could resist chocolate and strawberries? Try dipping half of the cookie into the glaze like a chocolate strawberry.

This recipe can be easily modified for other flavored cake mixes. Imagine replacing the strawberry cake mix with red velvet, caramel, banana supreme, orangesicle or any of your favorite cake mixes.

I’m thinking about trying a spice cake mix next with white chocolate glaze. What do you think?

Strawberry Chocolate Chip Cookies

Ingredients
  1. 1 package strawberry cake mix
  2. 3/4 cup butter or margarine, softened
  3. 2 eggs
  4. 1 cup mini semi-sweet chocolate chips

  5. Glaze:
  6. 1/2 cup mini semi-sweet chocolate chips
  7. 1/2 cup white chocolate chips
  8. 3 Tablespoons shortening
Instructions
  1. Heat oven to 350°
  2. In large bowl combine cake mix, butter or margarine and eggs. Mix well. Stir in mini semi-sweet chocolate chips.
  3. Drop by rounded spoonfuls on ungreased or parchment lined cookie sheet.
  4. Bake 10 to 12 minutes or until almost set. Cool slightly on cookie sheet before removing to wire rack. Cool completely.
  5. Drizzle with glaze and allow to set.
  6. Glaze: In small bowl microwave mini semi-sweet chocolate chips and 1 1/2 Tablespoons shortening for 30 seconds. Stir. If needed, microwave an additional 10 seconds or until melted and smooth when stirred. Drizzle on cooled cookies.
  7. In small bowl microwave white chocolate chips and 1 1/2 Tablespoons shortening for 30 seconds. Stir. If needed, microwave an additional 10 seconds or until melted and smooth when stirred. Drizzle on cooled cookies. Allow to set before storing in an airtight container.

This recipe is almost identical to Cherry Cordial Cookies with only a slight variation in the glaze. I liked cherry so much I decided to try strawberry!
