Who could resist chocolate and strawberries? Try dipping half of the cookie into the glaze like a chocolate strawberry.

This recipe can be easily modified for other flavored cake mixes. Imagine replacing the strawberry cake mix with red velvet, caramel, banana supreme, orangesicle or any of your favorite cake mixes.

I’m thinking about trying a spice cake mix next with white chocolate glaze. What do you think?

Strawberry Chocolate Chip Cookies

Ingredients
  1. 1 package strawberry cake mix
  2. 3/4 cup butter or margarine, softened
  3. 2 eggs
  4. 1 cup mini semi-sweet chocolate chips

  5. Glaze:
  6. 1/2 cup mini semi-sweet chocolate chips
  7. 1/2 cup white chocolate chips
  8. 3 Tablespoons shortening
Instructions
  1. Heat oven to 350°
  2. In large bowl combine cake mix, butter or margarine and eggs. Mix well. Stir in mini semi-sweet chocolate chips.
  3. Drop by rounded spoonfuls on ungreased or parchment lined cookie sheet.
  4. Bake 10 to 12 minutes or until almost set. Cool slightly on cookie sheet before removing to wire rack. Cool completely.
  5. Drizzle with glaze and allow to set.
  6. Glaze: In small bowl microwave mini semi-sweet chocolate chips and 1 1/2 Tablespoons shortening for 30 seconds. Stir. If needed, microwave an additional 10 seconds or until melted and smooth when stirred. Drizzle on cooled cookies.
  7. In small bowl microwave white chocolate chips and 1 1/2 Tablespoons shortening for 30 seconds. Stir. If needed, microwave an additional 10 seconds or until melted and smooth when stirred. Drizzle on cooled cookies. Allow to set before storing in an airtight container.

This recipe is almost identical to Cherry Cordial Cookies with only a slight variation in the glaze. I liked cherry so much I decided to try strawberry!

Cherry chocolate cookies! These easy cookies taste a lot like chocolate cherry cordials especially when they’re warm. I had to stop myself from eating them all before I could even glaze them.

You could try dipping half of the cookie into the glaze for a different look. Even if you slop the glaze around like I did, they end up looking artistic. I’m not adept at doing fancy things with glazes or icings, but I was pleased with the way they turned out.

I make this a lot around Christmas and often give it as gifts. I haven’t done anything creative with the packaging yet, but I’ll post pictures when I figure out something I like. For now, I just use pretty tins I’ve collected over the years. Eventually I’m going to run out, so I better come up with something soon.

Puppy Chow freezes pretty well, so leftovers always go in the freezer to be enjoyed later. It’s especially yummy frozen in the middle of the summer.

Be very careful, it’s addictive!

Ingredients
  1. 3/4 cup peanut butter
  2. 1/4 cup butter
  3. 1 cup chocolate chips
  4. 1/2 teaspoon vanilla
  5. 9 cups Rice Chex
  6. 2 cups powdered sugar
Instructions
  1. Place Rice Chex in large bowl.
  2. Place 1 cup of powdered sugar in gallon ziplock bag.
  3. Combine peanut butter, butter and chocolate in microwave safe bowl. Microwave for one minute. Blend thoroughly.
  4. Add vanilla to peanut butter and chocolate mixture. Stir well.
  5. Pour peanut butter and chocolate mixture over cereal and toss evenly. Make sure all cereal is coated.
  6. Dump half of cereal into gallon bag. Add last cup of powdered sugar and dump in remaining cereal. Shake until cereal is well coated.
  7. Pour cereal on waxed or parchment paper to dry.

This is the one recipe I make every single Christmas. Homemade caramel popcorn tastes so much better than what you buy in the store and it makes a great gift.

Toss in some drinks, healthier snacks (or more unhealthy snacks) if you like, and a movie to give the gift of family movie night.  One year, I made baskets with homemade movie night goodies for each family for Christmas. The hardest part was trying to figure out what movies they didn’t already have.

Caramel Popcorn

Ingredients
  1. 8 cups popped popcorn
  2. 3/4 cup packed brown sugar
  3. 6 Tablespoons butter
  4. 3 Tablespoons light corn syrup
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon baking soda
  7. 1/4 teaspoon vanilla
  8. 1 cup peanuts or pecans (optional)
Instructions
  1. Heat oven to 300 degrees.
  2. Use air popper to make popcorn per the directions on the popper or make on the stove in oil. Do NOT use microwave popcorn or seasoned bagged popcorn.
  3. Dump popcorn (and nuts) in a 9×13 inch pan. Remove any unpopped kernels.
  4. Measure brown sugar, butter or margarine (I think butter tastes better), corn syrup, and salt into saucepan.
  5. Over medium heat, cook brown sugar mixture until butter melts and everything is well mixed. Continue cooking until mixture starts to boil.
  6. Stop stirring when mixture starts to boil and cook for 5 minutes.
  7. Remove pan from burner. Stir in baking soda and vanilla. Pour over popcorn and gently stir the popcorn until coated.
  8. Put pan in oven and bake for 15 minutes. Remove pan and stir. Put pan back in oven and bake 7 minutes.
  9. Remove caramel corn to a piece of parchment paper to cool.
Notes
  1. I suggest using butter only. The taste difference is worth it.
  2. Tip: I usually wait until the caramel popcorn is cool enough to touch, then start gently breaking the kernels apart. If you cool it in a bowl, the kernels stick together in large clumps and you’ll have more to break apart.

Since the Slow Cooker North African Spiced Carrots recipe was a hit, I decided to try a sweet version in the slow cooker.

They turned out very good. The bite of the cayenne pepper added some needed spice with all the sweet.

Matches well with a good variety of meals. I serve it with spicy entrees often.

 

Slow Cooker Sweet Spiced Carrots

  1. 12oz bag frozen carrots
  2. 1 Tablespoon water
  3. 2 Tablespoons butter or margarine
  4. 2 Tablespoons brown sugar
  5. 1 Tablespoon lemon juice
  6. 1/2 teaspoon cinnamon
  7. 1/8 teaspoon cayenne pepper
  8. Salt, to taste (optional)
Instructions
  1. Grease 2 quart or less slow cooker with butter.
  2. Add all ingredients and cook on high for 45 minutes.
  3. Turn to low and cook an additional 2-3 hours, stirring occasionally.
Notes
  1. My 1 quart slow cooker doesn’t have a high setting, or any setting for that matter, so I cook it for 4-5 hours or until the carrots are tender.
  2. Using blanched carrots? Check a little earlier for tenderness.
  3. Using fresh carrots? Cut into 1/4 slices and add an hour to cooking time.

Mine didn’t turn out as pretty as I would have liked, but they were yummy!

These Mini Chocolate Chip Cheesecakes are wonderful to take to cool or winter month events and holidays. I’ve even left the chocolate out of the cream cheese mixture and used food coloring to make them red and green for Christmas. So, they were more like red and green mini cheesecakes with chocolate chips on top.

Ingredients
  1. 1 1/3 cups graham cracker crumbs
  2. 1/3 cup sugar
  3. 1/4 cup cocoa
  4. 1/3 cup butter or margarine, melted
  5. 2 cups semi-sweet chocolate chips or mini chocolate chips, divided
  6. 3 8 ounce packages cream cheese, softened
  7. 1 14 ounce can sweetened condensed milk
  8. 3 eggs
  9. 2 teaspoons vanilla extract
Instructions
  1. Heat oven to 300 degrees.
  2. Spray with cooking spray or paper-line 24-30 muffin cups.
  3. Stir graham cracker crumbs, sugar, cocoa and butter. Press in bottom of cups, using all of the mixture equally.
  4. Over low heat melt 1 cup of the chocolate chips.
  5. In large bowl, beat cream cheese until fluffy. Gradually add sweetened condensed milk and melted chocolate chips until smooth. Add eggs and vanilla. Mix well.
  6. Spoon batter into cups and top with remaining chips.
  7. Bake 20 minutes or until set. Cool, then refrigerate.
Notes
  1. To make mini cheesecakes with chocolate chips on top instead of chocolate cheesecakes, omit the chocolate in step 5.
  2. If you use cooking spray instead of the paper cups, let cool then freeze for 10-15 minutes. They should be easier to remove.

I wound up with several boxes of wheat and barley cereal, so I decided to see what would happen if I tossed it into some bread. Here’s the recipe I came up with. If anyone tries it and alters the recipe, please let me know. I’d like to try different versions.

Bread Machine Wheat & Barley, Flax Seed Honey Bread is a heavier bread and makes a wonderful peanut butter and jelly sandwich. Fantastic french toast, too.

  1. Add ingredients to bread machine pan in order listed in the bread machine manual. Use white bread cycle on medium or light setting.

I’ve tried many pancake recipes looking for the perfect pancake. So far, this one is my husband’s favorite and seems to be the closest I can come to that fluffy, yummy pancake I remember eating as a child.

Tastes great with maple syrup, chocolate chips, strawberries and whipped cream, peanut butter, bacon or whatever your favorite toppings. My favorite topping is Peach Berry Sauce, but sometimes I like to just throw my bacon and fried egg on the pancake then smother it in real maple syrup.

What are your favorite toppings?

  1. 1 1/2 cups all-purpose flour
  2. 3 teaspoons baking powder
  3. 1 teaspoon salt
  4. 2 Tablespoons sugar
  5. 1 1/2 cups buttermilk
  6. 1 egg
  7. 3 Tablespoons butter, melted
  8. 1 teaspoon vanilla
Instructions
  1. In a large bowl, sift together flour, baking powder, salt and sugar. You don’t have to sift, but sifting once or twice can make for a fluffier pancake.
  2. Make a well in the center of flour mixture and pour in milk, egg, melted butter and vanilla. Mix until smooth.
  3. Lightly oil griddle or frying pan. Over medium heat, pour approximately 1/4 cup batter per pancake. Brown on each side and serve.
Notes
  1. If using milk instead of buttermilk, lower the amount by 1/4 cup. Buttermilk is thicker, so using the same amount of milk makes for a runny batter.

1/2 cup butter
2/3 cup brown sugar or honey
1/2 tsp. salt
1 tsp. baking powder
1/8 tsp. cinnamon
1 tsp. vanilla
1/2 cup water
1 1/2 cup whole wheat flour

Cream butter & sugar in mixer. Combine remaining ingredients & add to creamed mixture, alternating with water. Mix well on Speed II. Let stand 30 minutes. Separate into 2 equal balls. Place each ball on greased sheets and roll to 1/8″ thickness. Score lines across with table knife to make 2″ squares. Sprinkle with cinnamon. Bake 350 degrees for 20 minutes.
