I love it when pork shoulder goes on sale because I can finally have me some pork stroganoff!

I looked at this recipe many times before I finally made it. I always thought stroganoff was supposed to be made with beef. That’s the way I always made it and wasn’t sure I would like it with pork. Turns out, I liked it better. Especially with smoked pork shoulder.

Another family favorite thanks to trying something a little different.

Ingredients
  1. 2 pounds boneless pork shoulder, 1 inch cubed
  2. 1 Tablespoon vegetable oil
  3. 1 cup onion, chopped
  4. 2 cloves garlic, minced
  5. 8 oz fresh mushrooms, sliced
  6. 1 cup water
  7. 1 Tablespoon instant beef granules or Better Than Bouillon
  8. 1 Tablespoon dried parsley
  9. 1/4 teaspoon pepper
  10. 1/2 cup sour cream
  11. 1/4 cup dry white wine
  12. 3 Tablespoons flour
  13. hot egg noodles
Instructions
  1. Brown pork in hot oil on all sides and drain. Add onion and garlic. Cook until tender, then transfer to slow cooker.
  2. Add mushrooms to slow cooker.
  3. Combine water, bouillon, parsley and pepper. Pour over meat and mushroom mixture.
  4. Cover and cook on low for 8 to 10 hours.
  5. Turn to high and heat until bubbly (about 10 to 15 minutes).
  6. Mix together the sour cream, wine and flour. Stir into pork mixture and heat until thickened (about 15 minutes).
  7. Serve over noodles.

We’ve hit cooler weather a few times over the last few weeks and chili is starting to sound good. I was looking for something a little different when I ran across a recipe for Slow Cooker Salsa Chili. I love salsa, so I thought salsa chili in the crock pot sounded like a wonderful idea. I added a few tweaks of my own and this is what I came up with.

Mild, with a little spice to it, this chili worked for everyone. Not everyone likes hot chili like I do.

Slow Cooker Salsa Chili

Ingredients
  1. 1 pound ground beef
  2. 1 medium onion, chopped
  3. 2 cloves garlic, minced
  4. 1 15 ounce can tomato sauce
  5. 1 16 ounce jar salsa
  6. 1 Tablespoon chili powder
  7. 2 teaspoons dried cilantro
  8. 1 16 ounce can pinto beans, drained and rinsed
  9. shredded cheddar cheese, for garnish (optional)
  10. sliced green onions or chopped red onions, for garnish (optional)
  11. sour cream, for garnish (optional)
Instructions
  1. Cook ground beef, onion and garlic over medium heat until beef is cooked through. Drain.
  2. In 4 quart slow cooker, combine beef and remaining ingredients except beans and garnishes.
  3. Cover and cook on low for 8 to 10 hours.
  4. Add beans and stir. Replace cover and cook 5 to 10 minutes longer or until beans are hot.
  5. Top with desired garnishes and serve.
Notes
  1. It's even better when you use homemade ingredients. You can replace the jar of salsa with 2 cups homemade salsa and the can of pinto beans with 2 cups homemade pinto beans, drained and rinsed.
  2. Tortilla chips, cottage cheese, guacamole, sliced black olives, green chiles and jalapenos make great garnishes. I tend switch it up and serve it a little different every time. Honestly, it depends on what I have on hand to what I garnish it with.
  3. Freeze Ahead:
  4. Cook the ground beef with onions and garlic and cool. Mix the rest of the ingredients except beans and garnishes and freeze in a Foodsaver or gallon bag. Make sure to get all the air out of the bag you can before freezing.
  5. When you’re ready to make the chili, thaw until the mixture fits in your slow cooker. I try to freeze it so that it fits right out of the bag in case I forget to take it out of the freezer the day before to thaw. If partially frozen, cook on high for 1 hour, then turn it to low for 7-9 additional hours. If completely thawed, cook for 8 to 10 hours on low.
  6. Don't forget the beans and garnishes!

Very easy!

When I need a side dish that goes together fast so I can concentrate on the rest of a large meal, this is one of the first recipes that springs to mind. I’ve made it for large potluck gatherings as well and there’s rarely any left.

My family loves it and it freezes well, so it’s one of my favorite go-to sides for large meals, holiday meals and other gatherings.

  1. 4 14.5 ounce cans green beans
  2. 1 medium onion, chopped
  3. 1/2-1 pound bacon, cut into 1/2 inch pieces
  4. 8 ounces fresh mushrooms, sliced (optional)
  5. coarse ground pepper to taste
Instructions
  1. Add all ingredients to 4 quart or larger slow cooker.
  2. Cook on low for 4 hours.

This nice and easy side dish compliments a variety of entrees. I like making herbed potatoes with recipes that take a lot of time to prepare. The potatoes cook in the slow cooker while making the main dish.

Red potatoes are pretty, but any kind will do. I’ve used regular baking potatoes, gold potatoes or whatever I had on hand. I’ve also replaced the herbs with Italian seasoning when accompanying an Italian main dish.

Ingredients
  1. 2 pounds small red potatoes
  2. 1/4 cup water
  3. 1/4 cup olive oil
  4. 3 Tablespoons snipped parsley
  5. 1 Tablespoon lemon juice
  6. 2 Tablespoons snipped chives
  7. 1 Tablespoon snipped basil
  8. Salt & pepper to taste
Instructions
  1. Wash potatoes and peel a strip around the center of each potato. Place potatoes in slow cooker and add water.
  2. Cover and cook on high for 2 1/2 to 3 1/2 hours or until tender. Drain well.
  3. In saucepan heat olive oil with parsley, lemon juice, chives and basil. Pour mixture over potatoes and toss until thoroughly coated. Season with salt and pepper to taste.
Notes
  1. Don't have fresh herbs on hand? Dried herbs work just fine. Make sure to crush dried herbs to help release their flavor

When I took the first bite of Curried Pork, I wasn’t sure that I was going to like it. The more I ate, the more I liked it. Spicy and just a little sweet, this recipe is a flavorful balance.

If you’ve never tried curry before, this is a good recipe try.

I like it best with smoked pork shoulder. I only cook it for 4 to 5 hours since the smoked pork is already cooked. The smokey flavor adds another dimension to the taste that I really enjoy.

  7. 3 Tablespoons curry powder
  8. 1/2 teaspoon paprika
  9. 1/2 teaspoon dried oregano, crushed
  10. 2 teaspoons chicken Better than Bouillon or granule equivalent
  11. 1 Tablespoon flour
  12. 2 cups hot cooked rice
  13. Apple wedges for garish, if desired
Instructions
  1. Brown pork in hot oil. Transfer to slow cooker and sprinkle with salt and pepper.
  2. Add onion, apple, curry, paprika, and oregano. Mix bouillon and 1 cup of water. Pour over pork.
  3. Cover and cook on low for 8 to 10 hours.
  4. Turn to high. Blend 2 Tablespoons cold water and flour. Stir into pork. Cover and cook until thick, about 15 minutes.
  5. Serve over rice and garnish with apple wedges.

I was pleasantly surprised at how well this turned out. Sweet but not too sweet and tangy but not bitter.  

Consider garnishing with lemon slices. I thought it might be too much lemon, so I didn’t. I will try it next time.

Serve with in season quick stir-fried vegetables for a well-rounded, time-saving meal.

Ingredients
  1. 3 to 4 pounds chicken leg quarters or thighs
  2. 1/3 cup flour
  3. 1 1/2 teaspoons salt
  4. 2 to 3 Tablespoons cooking oil
  5. 1 6-oz can frozen lemonade concentrate, thawed
  6. 1/4 teaspoon nutmeg
  7. 3 Tablespoons brown sugar
  8. 3 Tablespoons ketchup
  9. 2 Tablespoons vinegar
  10. 2 Tablespoons cold water
  11. 2 Tablespoons cornstarch
  12. 2 cups hot cooked rice
Instructions
  1. Skin chicken. Combine flour and salt. Coat chicken thoroughly.
  2. Brown chicken on all sides in hot oil. Drain. Transfer to slow cooker.
  3. Stir together lemonade concentrate, nutmeg, brown sugar, ketchup and vinegar. Pour over chicken.
  4. Cover and cook in high for 3 to 4 hours.
  5. Remove chicken. Pour liquid from slow cooker into saucepan. Return chicken to slow cooker to keep warm.
  6. Skim fat from liquid in saucepan. Blend cold water into cornstarch and stir into the hot liquid in saucepan. Cook and stir until thick and bubbly.
  7. Serve chicken with sauce over hot rice.

Since the Slow Cooker North African Spiced Carrots recipe was a hit, I decided to try a sweet version in the slow cooker.

They turned out very good. The bite of the cayenne pepper added some needed spice with all the sweet.

Matches well with a good variety of meals. I serve it with spicy entrees often.

 

Slow Cooker Sweet Spiced Carrots

  1. 12oz bag frozen carrots
  2. 1 Tablespoon water
  3. 2 Tablespoons butter or margarine
  4. 2 Tablespoons brown sugar
  5. 1 Tablespoon lemon juice
  6. 1/2 teaspoon cinnamon
  7. 1/8 teaspoon cayenne pepper
  8. Salt, to taste (optional)
Instructions
  1. Grease 2 quart or less slow cooker with butter.
  2. Add all ingredients and cook on high for 45 minutes.
  3. Turn to low and cook an additional 2-3 hours, stirring occasionally.
Notes
  1. My 1 quart slow cooker doesn’t have a high setting, or any setting for that matter, so I cook it for 4-5 hours or until the carrots are tender.
  2. Using blanched carrots? Check a little earlier for tenderness.
  3. Using fresh carrots? Cut into 1/4 slices and add an hour to cooking time.

I remember loving my mother’s Pork Marengo as a child, so when she passed down some of her recipes to me this was one of the first I tried my hand at.

I’ve modified the recipe slightly over the years and sometimes add more mushrooms and tomatoes than listed here when I have extras that need to be used. It’s even better with fresh tomatoes.

You can substitute canned mushrooms for the fresh ones, but it’s quite a taste difference. I try to avoid canned mushrooms because they have that “canned” taste, but sometimes it’s just more convenient.

  1. 2 pounds boneless pork shoulder, cut in 1 inch cubes
  2. 2/3 cup chopped onion
  3. 8 ounces sliced fresh mushrooms

  7. 1 teaspoon dried marjoram, crushed
  8. 1 teaspoon salt
  9. 1/2 teaspoon dried thyme, crushed
  10. Pepper to taste
  11. 1/3 cup cold water
  12. 3 Tablespoons flour
  13. cooked rice
Instructions
  1. Add undrained tomatoes, chicken bouillon, marjoram, salt, thyme and pepper to slow cooker. Stir well.
  2. Brown half of pork cubes, onion and mushrooms at a time in hot oil. Drain. Transfer meat mixture to slow cooker. Stir.
  3. Cover and cook on low for 8 to 10 hours.
  4. Turn to slow cooker to high. Blend cold water slowly into flour and stir into pork mixture. Cook uncovered on high 15-20 minutes or until thickened. Stir occasionally.
  5. Serve over hot rice.

I was looking for something to do with the frozen carrots I had, when I found this recipe on Eating Well. I decided to adapt it to a slow cooker to see how it turned out and I really liked the results.

Healthier, spicy, tasty and easy! I didn’t find it hot. It had a nice bite to it and was very far from bland.

Makes a great side dish for many different meals.

I wasn’t sure about this recipe. Ham just didn’t seem like the right meat. However, it turned out to be a family favorite. Hot, spicy, and full of flavor!

I’ve used pressed ham, smoked ham, smoked pork shoulder, and combinations of all three and it was good every time.

Make sure you adjust cooking time for fresh jalapenos or if you double the recipe.

  1. 3 cups chopped, cooked ham
  2. 2 cups shredded Monterey Jack cheese
  3. 8 oz can tomato sauce
  4. 1/4 cup jalapenos, chopped (or 4 oz can green chili peppers)
  5. 1/2 cup chopped green onion
  6. A few drops of bottled hot pepper sauce
  7. Corn Bread
Instructions
  1. In slow cooker combine ham, cheese, tomato sauce, jalapenos or green chili peppers, green onion, and hot pepper sauce. Cover and cook on low for 2 hours.

  3. To serve, split hot corn bread in half. Spoon El Paso Ham on bottom half of corn bread. Cover with corn bread top and spoon more El Paso Ham on top.
