This is a family favorite I posted some time ago and finally added a couple pictures. I’m still trying to remember to take pictures when I make some of the variations, but we don’t have this recipe often due to the high-calorie content.

I also discovered something after making this recipe many times. If you stir the mixture after 30 to 45 minutes of cooking, it resembles more traditional baked macaroni and cheese. If you don’t stir, it comes out more like layers with the top being a fluffy cheese layer.

Ingredients
  1. 2 cups uncooked elbow macaroni
  2. 1/4 cup butter or margarine
  3. 12 oz. sharp cheddar cheese
  4. 4 oz. mozzarella cheese
  5. 5 cups milk
  6. salt and pepper to taste
Instructions
  1. Preheat oven to 350 degrees.
  2. Layer macaroni, butter, and cheeses in a 9-by-13 dish. Pour milk over the top layer.
  3. Bake for one hour. Do not cover.
Notes
  1. To prevent this dish from becoming too brown and crusty (I like the brown and crusty myself but I know some people don’t), cover with foil for the last 15 minutes of baking.
  2. Experiment with other cheeses!
  3. You can turn this into an entrée by adding your favorite meats and veggies!

This is a very versatile dish. Try using leftover taco meat, chicken, peppers, or any number of variations to make a completely different dish every time. Let me know what you tried, what worked and what didn’t!

Easier than regular Chicken Cordon Bleu with the added bonus of pasta! I really enjoyed this recipe.

I modified the recipe some. With our love of garlic, I added a bit more along with more ham, pepper and parsley. Due to the salt in ham, I took salt out of the ingredients, so you might want to salt to your taste.

If you don’t like swiss cheese, you can use a different cheese. I think it would taste pretty yummy with provolone.

  3. 2 chicken breasts, cut into 1" inch cubes
  4. 1/2 pound diced ham
  5. 3 cups rotini pasta
  6. 1 cup water
  7. 2 cups chicken broth
  8. 1 teaspoon onion powder
  9. 1/2 teaspoon pepper
  10. 8 ounces Swiss cheese, sliced or shredded
  11. 1/2 cup breadcrumbs
  12. 1 Tablespoon dried parsley
Instructions

  4. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
  5. Remove pan from heat and add Swiss cheese. Stir until melted.

Notes
  1. If you don't want to use the broiler, toast breadcrumbs in a skillet before sprinkling over pasta.

I didn’t have any fresh parsley, so instead of the parsley and basil, I added about 1 Tablespoon of Italian Seasoning instead.  You can find Italian Seasoning with the spices.  It’s a pre-mixed variety of herbs commonly used in Italian food.  Since I used pressed ham, omitted the salt since ham has such a high salt content.  It turned out pretty well.  I think next time I might try adding some cream cheese to make the dish a little creamier.

Great recipe for surprise company and brunch with family and friends.

Many of us eat black-eyed peas for luck on New Year’s Day. I used to cook dried black-eyed peas with some fatty ham and jalapeño which is good, but I wanted something a little more exciting. After playing around with some recipes online, I came up with this dish. Even my husband, who doesn’t like beans or peas, enjoyed it.

Adding tomatoes symbolize health and kale to symbolize money to the black-eyed peas (prosperity or coin) and ham (forward movement or positive motion), should make this year very lucky! Luck aside, it’s a tasty rendition of a traditional dish.

Ingredients
  1. 1 package (12 ounces) Barilla Three Cheese Tortellini
  2. 1 cup frozen pepper strips, thawed
  3. 3 tablespoons butter
  4. 1-1/4 cups cubed fully cooked ham
  5. 1 teaspoon minced garlic
  6. 1-1/2 teaspoons ClearJel (cornstarch)
  7. 1/2 cup homemade chicken broth
  8. 1 teaspoon dried basil
  9. 1/2 teaspoon dried parsley flakes
  10. 1/4 teaspoon pepper
  11. 4 tablespoons grated Romano cheese, divided
Instructions
  1. Cook tortellini according to package directions. Meanwhile, in a large skillet, saute pepper strips in butter until crisp-tender. Add ham and garlic; saute 1 minute longer.
  2. Combine the clearjel, broth, basil, parsley and pepper; stir into pepper mixture. Bring to a boil; cook and stir for 2 minutes or until thickened.
  3. Add 2 tablespoons cheese. Drain tortellini; toss with ham mixture. Sprinkle with remaining cheese.
Notes
  1. You could use frozen cheese tortellini.
  2. I clean and freeze peppers at the end of the summer for use all winter.
  3. I also use fresh peppers when in season.
  4. You could use canned chicken broth if you want.
  5. Parmesan cheese could also be used instead of Romano.
  6. Wonderful recipe for using up that leftover ham after a holiday.

Note from Christy: The pictures have broccoli instead of peppers. I used a 12oz bag of frozen broccoli cuts for the picky people. I thought it was great with the broccoli, but I’m anxious to try it with peppers, too.

I wasn’t sure about this recipe. Ham just didn’t seem like the right meat. However, it turned out to be a family favorite. Hot, spicy, and full of flavor!

I’ve used pressed ham, smoked ham, smoked pork shoulder, and combinations of all three and it was good every time.

Make sure you adjust cooking time for fresh jalapenos or if you double the recipe.
